Fold in the grated carrots until evenly distributed throughout the batter. Pour batter into prepared pan and spread out evenly using an offset spatula or rubber spatula. Add in powdered sugar one cup at a time and mix until creamy between each addition – about 2 minutes total mixing time after adding in both cups of powdered sugar. Add in vanilla extract then turn up mixer speed to medium-high and beat for 3 full minutes until frosting is smooth and fluffy. Spread frosting onto cooled cake using an offset spatula or rubber spatula then decorate as desired with chopped nuts or shredded coconut if desired! Enjoy!
