How to Make the Perfect Enchilada Dish

Enchiladas are one of the most versatile and delicious dishes out there. Whether you choose beef, chicken, or vegetarian as your filling, this meal is sure to please. The Sauce

To create your own homemade enchilada sauce, heat 2 tablespoons of canola oil in a medium-sized saucepan over medium-high heat until it begins to shimmer. Add 2 tablespoons of all-purpose flour and cook for 1 minute, stirring constantly until it takes on a deep golden color. Gradually stir in 1 can (28 ounces) of enchilada sauce or Mexican red sauce and 2 cups of chicken broth and bring the mixture to a boil. Reduce the heat to low and simmer for 15 minutes, stirring occasionally until thickened. Stir in ½ teaspoon each of salt and black pepper before removing from heat and setting aside until ready to use.

The Filling
Next comes the filling! In a large skillet over medium-high heat, brown 1 pound of ground beef with 1 chopped onion along with ½ teaspoon salt until cooked through and lightly browned. Drain off any excess fat before transferring the beef mixture into a bowl and set aside for later use. To finish off your filling, warm enough canola oil in another skillet over medium-high heat to cover about ¼ inch up the sides of the pan before adding 10-14 corn tortillas one at time for about 30 seconds per side or until lightly browned (note: you may have extra tortillas depending on size). Transfer each tortilla onto paper towels when finished frying before spooning about 3 tablespoons worth of beef mixture onto each one followed by 2 tablespoons diced green chiles, 1 tablespoon chopped green onions, 1 tablespoon chopped black olives, ¼ cup grated Cheddar cheese down its center before rolling up tightly into an enchilada shape (tip: if desired sprinkle with additional cheese before rolling). Place seam side down into your prepared baking dish. When all are filled and rolled repeat with remaining ingredients if desired (note: you may have some leftover filling). Spoon reserved sauce evenly over top making sure they are completely covered then sprinkle with remaining cheese before baking uncovered at 350F for 25 minutes or until bubbly hot throughout. Serve garnished with cilantro leaves if desired and enjoy!
