Cozy Up with a Bowl of Chicken Noodle Soup!

Nothing says "cozy" like a warm bowl of chicken noodle soup. It's the perfect way to keep warm on those chilly nights, and it's also an easy dish that can be ready in no time. Let's take a look at this classic chicken noodle recipe and how you can make it your own.

Ingredients
2-1/2 pounds bone-in chicken thighs
1-1/4 teaspoons pepper, divided
1/2 teaspoon salt
1 tablespoon canola oil
1 large onion, chopped
1 garlic clove, minced
10 cups chicken broth
4 celery ribs, chopped
4 medium carrots, chopped
2 bay leaves
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
3 cups uncooked kluski or other egg noodles (about 8 ounces)
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice

Instructions
1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic and thyme and sauté until the onion is soft and translucent—about 5 minutes.
2. Add the broth, bay leaves, carrot, celery and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes.  
3. Add the egg noodles and cook for 5 minutes or until tender. Stir in the chicken cubes and simmer for another 5 minutes or until cooked through.  
4. Stir in the parsley and season with salt & pepper to taste before serving.
