Nourish Your Body with Stuffed Butternut Squash

Butternut squash is a delicious and nutritious vegetable that is packed with vitamins, minerals, and fiber. Not only is it incredibly tasty, but it also offers many health benefits such as promoting cardiovascular health, supporting your digestive system, and aiding weight management. Let’s take a look at how you can make a delicious stuffed butternut squash to nourish your body.




Ingredients
For this recipe, you will need 2 pounds of butternut squash (usually one large or two small), 1 teaspoon of olive oil, ½ cup of cooked quinoa or brown rice (or both!), ½ cup of roasted red pepper diced into small cubes, ½ cup of feta cheese crumbled into chunks, 2 tablespoons of chopped fresh parsley or cilantro (or both!), salt and pepper to season.

Directions
1. Preheat oven to 375°F. Cut the butternut squash in half lengthwise and scoop out the seeds from the center. Drizzle each half with olive oil and sprinkle with salt and pepper then place on a baking sheet lined with parchment paper. Bake for 45 minutes or until soft when pierced with a knife.
2. Meanwhile, cook quinoa according to package directions if necessary and set aside to cool slightly when finished cooking. Mix together cooked quinoa (or brown rice) red pepper cubes, feta cheese crumbles, fresh herbs, salt and pepper in a medium bowl until everything is evenly combined. Remove butternut squash halves from the oven once they are done baking.
3. Divide the quinoa mixture between each half of the butternut squash using a spoon to fill in all the nooks and crannies then top with extra feta cheese crumbles if desired before returning them back to the oven for an additional 15 minutes or until everything is heated through completely. Serve warm! If desired you can add any other ingredients that you would like such as diced tomato or cooked sausage!
