Healthy and Delicious Chicken Fajitas

Craving something delicious, but also looking for something that won’t break your diet? Look no further! We have a satisfying and healthy chicken fajita recipe that is sure to tantalize your taste buds. This dish is packed with flavor and comes in at only 350 calories per serving. Let’s get cooking!

This dish utilizes free-range, organic boneless skinless chicken breasts, red peppers, yellow or orange peppers, and a large yellow onion. For the marinade you will need grape seed oil, lemon juice, pink Himalayan salt, dried oregano, ground cumin, garlic powder, chili powder, paprika and crushed red pepper flakes. All of these ingredients work together to make this dish flavorful yet not overly spicy.

Making the Marinade
The first step is to create the marinade by combining all of the ingredients in a small bowl. Once everything is stirred together you can add it to a resealable bag with the chicken slices and let it sit while you prep the vegetables. This should be done at least 30 minutes prior to cooking so that the flavors can really meld together.

Cooking Time
Once everything has been prepped it’s time to start cooking! Heat up 1 tablespoon of grape seed oil over medium heat in a large skillet. Then add in your prepared vegetables and sauté for about 8 minutes or until they are tender crisp-cooked through. Once the vegetables are cooked remove them from the pan and set aside on a plate. Now add in another tablespoon of grape seed oil along with your prepared chicken slices and cook until they are no longer pink (about 8 minutes). Once cooked through return the vegetables to the pan with chicken and mix everything together for an additional 4 minutes or so until everything is hot throughout. Serve warm with some whole wheat tortillas or with some brown rice on the side for a complete meal!
